Savory Crepes

- Eggs, 2
- Flour, 125g
- Milk, 250g
- Butter
Ingredients to taste
in this case are:
- P.cotto and emmental
- P. raw and Galbanino
- Chard and smoked cheese
- Bresaola and rocket
Put the flour in a bowl and started to pour the milk, stirring the mixture until it is smooth and free of lumps. In a separate bowl, beat the eggs with a fork, add them to the batter and mix prepared earlier. Stir the mixture well until you have a smooth batter for pancakes. I advise you to cover the dough with plastic wrap and place in the fridge to rest for half an hour so that the flour releases all the starch. Take back the dough and mix again for 1 minute. (If you do not have time you can skip the step of the refrigerator).
At this point you heat a knob of butter in a nonstick pan and when it is melted, pour a ladle of batter in the center of the pan. Tilt and rotate the pan to spread the mixture over the entire surface. Cook each pancake one minute per side about turning with a spatula.
Now fill them as you like.
